Mediterranean Summer Salad

Do I have a super easy and very low-key recipe for you. This is fresh from your garden or local farm stand or farmer's market and then right to your table for the freshest and tastiest salad for summer. Our family has long made this type of salad that can be known by various names like the simple summer salad, or chopped veggie salad. This salad is closely related to the Greek Salad, however, this salad contains no letttuce. This salad is so versitile one can adjust to likes and dislikes and adjust ingredients and dressings. If you do have a garden by all means please use your cucumbers, tomato, and green peppers in this salad. Delicious! For our family the salad ingredients for this recipe we chose were: *1 large cucumber ( chopped into 1/2" pieces) *1 tomato chopped (chopped into 1/2" pieces) (*can use 1 pint of cherry/grape tomato sliced or not) *1 medium green pepper (cut into thin strips) (*can chunk them if so desired) *About 1/2 red onion sliced very t

I'm always on the outlook for easy,tasty and fulfilling foods to eat. I also love recipes that I can make that everyone would enjoy even if they are not on a specified lifestyle diet. It cannot get easier than this lovely keto nugget recipe. This recipe and others that are similar to this have gone viral on social media. So I've adapted this one. You'll need a mixing bowl, and I have used a simple mini muffin tin to shape them. But you can use a regular muffin tin or shape them with your hands, it's up to you. So you need a simple,quick, and easy snack recipe and it has to be Keto-friendly? Oh I have a great little snack that takes about 10 minutes to prepare and to bake and you'll just love them. These treats are something a bit different but will keep you satisfied and in ketosis. (I'm that person who is FOMO) Really, I am missing out and if one intends to stay with the keto lifestyle, you have to give yourself little easy snacks that you can much on while everyone is opening a bag of chips and dip in front of you. This recipe isn't just good for keto, anyone at all can eat these and love them. Preheat your oven between 375-400 degrees (oven times vary) For this recipe I will be using a regular sized muffin tin pan, one can use the mini-muffin maker and I would set the oven on only 375 degrees. Well you know we tried it, maybe you have too, but if you didn't you really should! This easy recipe was simply all over the internet; I mean everywhere! That's how it became viral, because even younger foodies were making it too. Our family not only loves to try new things in the way of food,we love eating the new stuff too, so now we were off to the races. We love cheese and for a ketogenic person this is a good thing too. TIPS: This recipe involves using a whole block of feta cheese. Please do not get crumbles of feta it will NOT cook the same way. Grape tomatoes are used in my recipe and these are keto but only eaten in moderation. If you have only cherry tomatoes on hand you can use them here as well. Use only olive oil and the right amount of it because this will help cook the tomatoes to confit (bursting open).
