Viral Feta Cheese Bake Recipe

Well you know we tried it, maybe you have too, but if you didn't you really should! This easy recipe was simply all over the internet; I mean everywhere! That's how it became viral, because even younger foodies were making it too. Our family not only loves to try new things in the way of food,we love eating the new stuff too, so now we were off to the races. We love cheese and for a ketogenic person this is a good thing too. TIPS: This recipe involves using a whole block of feta cheese. Please do not get crumbles of feta it will NOT cook the same way. Grape tomatoes are used in my recipe and these are keto but only eaten in moderation. If you have only cherry tomatoes on hand you can use them here as well. Use only olive oil and the right amount of it because this will help cook the tomatoes to confit (bursting open).
HERE'S THE RECIPE *2 Pints cherry or grape tomatoes *3 cloves of garlic chopped or grated finely *1/2 Cup virgin olive oil *1 8 0z block of feta cheese *1/4 tsp Kosher salt *ground pepper to taste or here we use red pepper flakes *10 ounces of pasta that is short and will hold up such as penne, rigatoni,or fusilli(rotini) *optional* Italian seasoning or oregano or thyme or use handful of fresh basil for garnish on top of pasta for presentation when you are ready to serve.
HOW TO: Pre heat your oven to 400 degrees. In your baker or here I used a simple glass 9 x 13 pan, combine together the tomatoes, the garlic and almost all of the olive oil.Reserve about 1/4 c of oil set asdie. When well mixed season with your salt and red pepper flakes or the optional seasonings. Toss again.Now arrange feta cheese in the center and middle of the pan. Now drizzle top of feta with remaining olive oil. and scatter thyme or other seasonings. Bake in the oven for 40-45 minutes. Check to make sure the tomatoes are bursting and the feta is golden on top.
FINALLY While your feta is baking make your pasta, I used 10 oz of rotini (fusilli) cook as directed on your package and drain. DO NOT RINSE. save a bit of starch water in case the pasta dish is not creamy, then add. *Remove from oven when brown. Begin to smash and mix.(see video) *For us Keto, I pulled out a small dish of the feta cheese sauce and then I dipped veggies in it! It was the bomb.com!
LASTLY Mix in the warm pasta with the feta cheese sauce. This should yield approx. 6 servings. It will have about 429 calories, 36 g of carbs., and 6 g sugar. *These figures are with the pasta. *One can substitute gluten-free pasta if desired. This dish contains no meat, therefore is vegetarian. *For the approx. 3 TBsp. I pulled out for my Keto, it is neglible and I would say about 100 calories, and about 3-6 g carbs.(this is a guess) Fantastic! Even my finicky teenager ate this! Bomb.com.
