Viral Feta Cheese Bake Recipe

Image
Well you know we tried it, maybe you have too, but if you didn't you really should! This easy recipe was simply all over the internet; I mean everywhere! That's how it became viral, because even younger foodies were making it too. Our family not only loves to try new things in the way of food,we love eating the new stuff too, so now we were off to the races. We love cheese and for a ketogenic person this is a good thing too. TIPS: This recipe involves using a whole block of feta cheese. Please do not get crumbles of feta it will NOT cook the same way. Grape tomatoes are used in my recipe and these are keto but only eaten in moderation. If you have only cherry tomatoes on hand you can use them here as well. Use only olive oil and the right amount of it because this will help cook the tomatoes to confit (bursting open). HERE'S THE RECIPE *2 Pints cherry or grape tomatoes *3 cloves of garlic chopped or grated finely *1/2 Cup virgin olive oil *1 8 0z block of feta che

Keto Blueberry Muffins

Homemade Keto Blueberry Muffins Often times in this Keto journey if  I don't eat enough food sometimes I get the "muchies" and I want something else to eat, or sometimes I do want something quick and easy to eat in the morning. I love making these Keto Blueberry Muffins. I am not sure where this recipe originated because I follow so many foodie and Keto people. But I wanted to share this recipe with all of you. Part of why Keto is successful is because the person can control exactly what is going into their food because they are making it. This recipe does call for Almond flour (usually blanched), I only had an almond flour meal on hand so this is what I used.  *Coconut flour is not the same please refer to this helpful conversion website: https://www.dummies.com/food-drink/special-diets/paleo-diet/substituting-coconut-flour-for-almond-flour/ Here are the ingredients 2 1/2 cups of  almond flour 1/3 cup of Keto friendly type sugar (erythritol) I used Swerve

Lovely Asparagus Asparagus is a vegetable that is often synonymous with spring. It can be found in abundance. It is considered a vegetable that prefers cooler temperatures, and usually, seeds are started in the late winter and then set out as soon as the soil is warm enough. This lovely asparagus is commonly bright green, but can be found in purple and in white, contains a lot of great vitamins and minerals for you. One spear of medium size thickness will have only approximately 3 calories and contains 0 g of these: polyunsaturated fats, monosaturated fats, cholesterol, and sodium. Here are just a few more highlights of asparagus, carbs 0.6g, fiber 0.3g, sugar 0.3g, and protein 0.4g. There’s a lot to that little medium size spear, but wait it also contains vitamins A, C, E, K, and B6, also minerals like folate, copper, iron, and calcium. While the purple asparagus has the highest antioxidant fighting power and the white the lowest, the green asparagus is widely availab

My Ketogenic Journey

Image
My Ketogenic Journey For the past three months, I have journeyed into the “keto” diet. I was looking for a diet that I could make what I wanted and lose weight. I have struggled with other diets, feeling deprived and not being able to stay on them. At first, I delved into the list and thought “Oh wow, this is going to be tough”, it’s so restrictive! But for some reason, at this point, it has been easy. I feel better, i.e. way less bloated and I did lose weight immediately! This helps to keep you in the game. So….. I’m pasta-less, potato-less, bread-less and I love it.  Mostly, keto is everything I was eating already, just remove all the carbs and sugar and voila! Pounds gone, I highly recommend. At this writing, I have successfully lost 21 pounds. Here’s my take on lunch the other day: My own keto take on salmon salad (faux salmon nicoise) ½ C= about 4 oz.  (Mixed greens: spinach, kale, chard, arugula) 7g of carb, 3 g fiber, 4 net carbs 40 calories 1 ½ C =about 12
