My Ketogenic Journey

For the past three months, I have journeyed into the “keto” diet. I was looking for a diet that I could make what I wanted and lose weight. I have struggled with other diets, feeling deprived and not being able to stay on them.

At first, I delved into the list and thought “Oh wow, this is going to be tough”, it’s so restrictive! But for some reason, at this point, it has been easy. I feel better, i.e. way less bloated and I did lose weight immediately! This helps to keep you in the game. So….. I’m pasta-less, potato-less, bread-less and I love it.  Mostly, keto is everything I was eating already, just remove all the carbs and sugar and voila! Pounds gone, I highly recommend. At this writing, I have successfully lost 21 pounds.
Here’s my take on lunch the other day:

My own keto take on salmon salad (faux salmon nicoise)

½ C= about 4 oz.  (Mixed greens: spinach, kale, chard, arugula) 7g of carb, 3 g fiber, 4 net carbs 40 calories
1 ½ C =about 12 oz. Sweet butter (red leaf, green butter lettuce)2 g carb, 1 g fiber, 1 g net carb 10 calories
1 plum tomato 2.5g carb, 1 g fiber 1.5 net carbs 10 calories

1 4 oz. baked salmon (leftovers wild caught lemon juice salt & pepper) approx. 241 cal 0 g carb

Homemade low carb keto Ranch dressing

   *I used 2 Tbsp.  it has approx. 1 g carb, 0.1 g fiber about 156 calories
Approx. 301 calories salad & 156 calories on dressing=457 calories approx. 6.5 carbs
Recipe for your own Ranch dressing and dip

1 c mayo                                          2tsp parsley                  ½ tsp garlic powder
½ c sour cream                               1tsp dill                         ½ tsp onion powder
2 tsp lemon juice (use fresh if you can)                               1tsp chive
¼ tsp pepper                                 ½ tsp sea salt                 1/4c unsweetened almond milk


Directions: whisk all ingredients together, add the almond milk last, add it slowly to test for the desired consistency wanted. Then chill in the refrigerator for at least one hour and keep in a closed container (I use ball jar). Stays for about 10 days.
