Stuffed Mini Cucumbers Recipe

Image
I am always looking for new recipes and tasty appetizers for the next party/party hosting I will do. I look for quick, easy, crowd pleasing and I detest turning on the oven if I don't have to. *Summer Tip* I feel the key to feeling great especially in the summer,is to stay hydrated all while eating your way into healthy vitamins and minerals. Make sure you eat your summer vegetable harvest that contain foods like cucumbers because they are usually in abundance and the water content is high in cucumbers!* I reccently came across a recipe in the Costco magazine that is a version of a recipe that my own mother used to make for summer parties and for a simple dish that replaced a salad, they called them "Stuffed CuteCumber Boats". I'll link this recipe later at the end, but here is the version that my mom used and that I now use that we just called Stuffed Cucumbers. *Recipe Tip* I depise waste, especially food waste, and if I can I will use something I have on-hand ...

Sunday Slow Down

Image
This is me taking a deep breath and releasing all of the week's stress, and enjoying a Sunday slow down. This is how I like to end the week. A simple warm green tea and a toss of fresh lemon. I try to seclude myself and just be still and quiet. It does my soul good. This is a sweet potato vine. I use them to fill in my pots for added demension and "greenery" among the flowers that I plant. Did you know that this plant flowers? In all the years I've had them I never recalled them blooming and this purple leaf looks great as they stay in my midwest climate all the way through Fall. Anyway this is the epitome of actually stopping to smell the flowers, and I did just that. I've been working on some new recipes, and exercises to add to my walking journey So I'll be posting those updates this week. What do you do to unwind and have you tried new exercises of late? I hope you're all still staying active. It's very hard to be motivated when vacation comes cal...

Thursday Thoughts and Tiny Helpers

Image
The current state of affairs in the world, especially in the United States, calls attention to truly random thoughts I will share here today; I hope though, that this post will find a bit of yourself here and even afford a smile or two. The chaos of the world makes me attend to my self-care routines a bit more.In order to unwind I have done some face masks, and foot masks and even a manicure while adding in more exercise and healthy sleep and eating. How about you? My favorite exercises of Tai Chi are great for restoring and revitalizing myself. The exerises are thought provoking and meditative. I was able to host a family event afternoon with my children and grandchildren. Remember when someone said "find your Joy"? That's exactly what I find when I seek joy.Family. We came together had food, gifts, desserts and laughs. There were yard games, and bubbles and backyard patio conversation over wine. Lastly, and never the least, still the highlight of my day were the tiny he...

Switch Out The Bad Ingredients

Image
There is so much unnecessary sugar in items such as condiments for example, as well as other not so good for you things. People that struggle with health issues and people who are interested in what types of ingredients are in their favorite condiments are shocked when they actually read the labels! Here is a great quick guide on label reading: (see picture below) I find that once I started doing it, it became like second nature. I pick up an item in the store and the first thing I do is read the label. The companies have gotten the message of late, that people are not going to buy things that they think are "bad" for them or the ingredients do not coinside with their specific desired dietary needs, so they have been slowly illiminating them. Now those with a lactose intollerance or allergy for example, can find alternatives. This is great for everyone. I have personally been ketogenic for the longest time and I have been able to maintain my weight and my tummy feels well ...

Mamma And My Fragrant Kitchen

Image
Who knew I'd be making soup in Spring? Well it's May 1st and it's still chilly out,the temps near me a high of 48 degrees and it's cloudy, overcast and feels more like Fall than late Spring. So when I'm feeling blase' I hit the kitchen. I figured I had enough pantry items on-hand to make my family a simple chicken noodle soup. I'll share my pictures and mini recipe here, but before I do as an aside...I kept thinking about my mother; her heavenly birthday just passed us by and since then she's been in my thoughts, and she left me with the fragrant food memories. Here's a photo of my mom in the late 1960's (I think). She loved flowers and I inturn also love them. (Again, with the fragrance) I love looking out at my window and seeing this beauty everyday. But anyway back to soup and mom leaving a legacy of creativity in the kitchen. The oven and the stove boiling over all the time with the homemade goodness. I remember when we used to cook whole ...
