Stuffed Mini Cucumbers Recipe
I am always looking for new recipes and tasty appetizers for the next party/party hosting I will do. I look for quick,easy,crowd pleasing and I detest turning on the oven if I don't have to.
*Summer Tip* I feel the key to feeling great especially in the summer,is to stay hydrated all while eating your way into healthy vitamins and minerals. Make sure you eat your summer vegetable harvest that contain foods like cucumbers because they are usually in abundance and the water content is high in cucumbers!*
I reccently came across a recipe in the Costco magazine that is a version of a recipe that my own mother used to make for summer parties and for a simple dish that replaced a salad, they called them "Stuffed CuteCumber Boats". I'll link this recipe later at the end, but here is the version that my mom used and that I now use that we just called Stuffed Cucumbers.
*Recipe Tip* I depise waste, especially food waste,and if I can I will use something I have on-hand as a substitute. An example here and in that Costco recipe it calls for specific types and/or kinds of tomatoes, I will just use a regular roma tomato instead of grape/or cherry tomatoes and a calling for specialty olive mix, I'll just chop what I have on-hand; simple black olives in this case. This recipe can be substitued in many ways and in many variations. Use what you have on-hand.

Stuffed Cucumbers (Yield 6 Baby cucumbers)
Ingredients:
.cucumbers (For this recipe I used 6 baby cucumbers)
.tomato chopped fine (2 tbsp)
.black olive ch. fine (3 tbsp)
.cream cheese softened (2 0z)
.Everything Bagel Seasoning (1tbsp)
.Garnishes as desired
*pepper flakes
*dill
*Directions*
1. Set your cream cheese on the counter to soften.
2. Wash & dry your cucumbers, slice lengthwise, then taking a small spoon scrape out the seeds and a bit of the pulp.Dab the cucumbers with a paper towel, now as they will be wet. This can make your recipe runny.
3. Chop olives into small fine pieces. Mix cream cheese and the olives together. One can fill cukes with a spoon, but I will "pipe it into the cucumbers. Here's how I did it.*Recipe Tip* I fill a sandwich baggie with the cream cheese/olive mixture. Then I cut one corner off the baggie and simply push out mixture into the cucumbers. A conversion for cream cheese 1/4 cup of cream cheese = 2 ounces of cream cheese.
4. Top with chopped tomato,the everything but the bagel seasoning and any of the garnishes you desire. Add extra olives, salt & pepper to taste,the dill or pepper flakes.
5. Chill in refrigerator, but serve that day. These will get soggy if left in the refrigerator too long.
This recipe is keto friendly, low-carb. This can be used as a snack, appetizer, or part of your meal. *Remember you can ajust this recipe to your dietary needs. Substitute cream cheese for a vegan cream cheese for example. Adding something like Shrimp,or chipped beef the calories and carb counts go up.
