Happy 4th Of July and Caprese Kabobs Recipe

I want to start out by wishing you a Happy Independence day!



No matter how you spend it today, please be safe. Practice safety in so many ways like watching out for the little ones, being sure you are safe around fireworks and sparklers! (while we see them as a lower-class firework they are dangerous!) Sparklers burn at between 1800 degrees-3000 degrees Fahrenheit! That's hot and super dangerous.

Here's a very simple yet classic appetizer recipe for the picnic, backyard BBQ, or even wedding.
I love to make food that all types of diets can enjoy. This is gluten-friendly, keto-friendly, and vegan. It can be made with all organic ingredients; including the cheese, but for this recipe today I cheated and used cheese sticks to save time. 

Need
-Cherry or grape tomatoes  (today I used 40) 2 on each stick
-skewers (your choice I used bamboo but sometimes they're not perfect i.e. crooked or shredding) can use long party toothpicks as well.
-Favorite Balsamic vinegar
-Favorite olive oil
-Cheese can cut chunk into pieces, cheat with cheese sticks, or use authentic Cheese balls found in the deli are usually packed in water, or in a prepared vinegarette. If they are in vinegarette skip the balsamic drizzle).
-Fresh Basil leaves
-Fresh peppercorns
-a handful of kosher salt

Assemble

On your platter line up you skewers, then plan the order that you would like your kabobs to be. I am using this order today: cherry tomato, then basil, then cheese, then basil, then finish with a cherry on top!

Clean and rinse basil. leave to dry on a cloth.

You'll need 2 tablespoons of olive oil and 2 teaspoons balsamic vinegar. Whisk together. (* You can double this if you want more dressing on top of if you do more than 20 appetizers)


 
I put my dressing into a measuring cup, whisk and pour over the top
Next, add the rest of the ingredients 
layer them as you like, and then disperse pepper (I use grinder all over the top)if you would like and a small handful (pinches) of kosher salt to taste.
This is the Finished tray!

These are about 44 calories per appetizer. I added simple green olives to the middle to finish it off! Have a great day!
